What is Proofing?

Proofing is the final step in the process of rising after the dough is prepared for baking. Proofing properly is essential to the quality of baked goods, including bread.

Why is it important?

Overproofing dough can cause the dough to collapse and product quality to suffer. Underproofing dough results in a tight, dense dough. Both under and overproofing will affect the way that bread rises when it is baked. Sometimes it is hard to know precisely when a product is appropriately proofed.
