Proofing

What is Proofing?

Proofing is the final step in the process of rising after the dough is prepared for baking. Proofing properly is essential to the quality of baked goods, including bread.

Why is it important?

Overproofing dough can cause the dough to collapse and product quality to suffer. Underproofing dough results in a tight, dense dough. Both under and overproofing will affect the way that bread rises when it is baked. Sometimes it is hard to know precisely when a product is appropriately proofed.

Proofing Cabinets (Proofers)

To take the guessing out of proofing, Metro offers a variety of cabinets to make the process more standardized. Our proofing cabinets come with easy-to-use controls to maintain proper humidity and temperature for consistent proofing. By maintaining the environment, Metro’s proofing cabinets save time by reducing the amount of time the process of fermentation takes.

Metro cabinets come with multiple configuration options, including clear doors to keep a visual on products as they proof. Our unique proofing modules are easy to maintain and can be removed from the unit for easy cleaning and repairs. To better utilize your kitchen space, Metro has a range of modules that can both proof and hold foods.
