Proofing Cabinets for Dough Proofing by Metro

Metro proofing cabinets offer an ideal proofing environment by providing humidity and temperature control, ensuring perfect proofing every time.

What is breadproofing?

Breadproofing is the final rise of shaped dough before baking. It’s a crucial step in the bread-making process, allowing the dough to develop the proper texture and flavor. Here's a breakdown:

  1. What happens during proofing?
    • The yeast in the dough continues to ferment, producing carbon dioxide gas.
    • The gas gets trapped in the dough's gluten structure (the network of proteins), causing the dough to expand and rise.
    • Fermentation enhances the bread's flavor, as yeast and bacteria create compounds, improving the final taste.
  2. How to proof dough:
    • After kneading and shaping the dough, it's left to rise in a warm, draft-free area or cabinet.
    • Most doughs need to double in size during proofing, which can take anywhere from 30 minutes to several hours, depending on the recipe, temperature, and type of yeast used.
  3. Signs that proofing is complete:
    • The dough will have noticeably increased in size.
    • It will feel lighter and more airy.
  4. Over-proofing vs. under-proofing:
    • Under-proofing: The dough hasn't risen enough, which can lead to dense bread with poor texture and small air pockets.
    • Over-proofing: The dough rises too much, and the gluten structure weakens, making it prone to collapse in the oven, resulting in flat bread.

A warm, humid environment can speed up the proofing process, while a cooler environment can slow it down for a more controlled rise.

What does a proofing cabinet do?

A proofing cabinet or proofer provides the ideal environment for proofing every time through humidity, temperature, and circulation control. These cabinets are a great way to speed up the proofing process and create a more consistent final product.

Why invest in a Proofing Cabinet/ Proofer?

  • With the help of a proofing cabinet, having specific set points and proper airflow you can create a process to help take the guesswork out of proofing.
  • Proofing cabinets provide the perfect environment speeding up the proofing process
  • A more streamlined approach to proofing increases efficiency. Proofing cabinets can proof many products at once in a confined and secure area.
  • More uniform products. Having a set environment means that you get the perfect proof every time, ensuring that your products are of the highest quality.
